1701 Season Premiere

Join Don Meissner as he takes you to the mountains for beautiful brook trout, wilderness Quebec for northern pike, Long Island, New York for stripers and the famous Salmon River for the "king" chinook salmon. This special show kicks off Don's 17th season on public television as host of "Streamside."

Over the years, Don Meissner has met a lot of people, but never has he met a guide like Roland Duranceau. On this week’s episode of "Streamside," join Don and Roland in Lac Berthelot, Quebec. Salt

1 fresh lime
1 garlic bulb
½ medium red onion
Halopina pepper and/or tomato

PREPARATION

Slice trout into thin pieces rather than 
chunks.
Slice red onion into very small chunks. 
Mix lemon/lime juice and onion with lake trout in a bowl. 
Add salt to taste

(The acid from the lemon and lime actually cook the trout)

Serve immediately or refrigerate overnight. Serve on a cracker. Top off with horseradish sauce and lemon.

Poor-Man’s Shrimp

INGREDIENTS

1 Northern Pike fillet
Garlic salt
Favorite cocktail sauce
Bowl of ice water

1 Northern Pike fillet
Garlic salt
Favorite cocktail sauce
Bowl of ice water

PREPARATION

Cut pike fillets into one-inch squares.
Place fillets into mesh strainer.
Put 1 inch of water in bottom of large pot.
Sprinkle in garlic salt.
Bring to a boil.
Place strainer in pot, and cover.
Steam for 30 seconds.
Remove cover and turn pike with fork.
Return to steam for another 30 secs.

Sprinkle in garlic salt.
Bring to a boil.
Place strainer in pot, and cover.
Steam for 30 seconds.
Remove cover and turn pike with fork.

Prepare pan with ice water. After steaming pike, immediately immerse into ice water. Leave for one minute and remove. Chill in refrigerator for 20 minutes. Serve with toothpicks and your favorite cocktail sauce.
