1 garlic bulb

PREPARATION
Slice trout into
thin pieces rather than
chunks.
Slice red onion into very small chunks.
Mix lemon/lime juice and onion with lake trout in a bowl.
Add salt to taste

(The acid from the lemon and lime actually cook

Serve immediately or refrigerate overnight. Serve on

Poor-Mans Shrimp
INGREDIENTS
1 Northern Pike fillet
Garlic salt
Favorite cocktail sauce
Bowl of ice water
1 Northern Pike fillet
Garlic salt
Favorite cocktail sauce
Bowl of ice water
PREPARATION
Cut pike
fillets into one-inch squares.
Place fillets into mesh strainer.
Put 1 inch of water in bottom of large pot.
Sprinkle in garlic salt.
Bring to a boil.
Place strainer in pot, and cover.
Steam for 30 seconds.
Remove cover and turn pike with fork.
Return to steam for another 30 secs.
Cut pike fillets into one-inch squares.

Bring to a boil.
Place strainer in pot, and cover.
Steam for 30 seconds.

Prepare pan with ice water. After steaming pike,
immediately immerse into ice water. Leave for one minute and remove. Chill in refrigerator
for 20 minutes. Serve with toothpicks and your favorite cocktail sauce. |
